Five reasons Turkey should be centre of your table, plus Manu’s Turkey Koftas recipe

Turkey is a top choice during the festive season, but this incredibly healthy protein is available year-round - with Ingham’s revealing its top selling fresh Turkey products are Turkey Mince, Turkey Breast Mince, Turkey Minute Steaks and Turkey Breast Steaks. Does Turkey make an appearance on your shopping list? Here are five reasons why it should:

Turkey is versatile and tasty. Turkey comes in a variety of product options and can be used in a wide range of recipes. It has a similar taste to chicken and absorbs flavours well making it a great healthy meat option. Turkey-mince in particular is a wonderful substitute to use in any family-favourite mince recipe, such as Bolognese, meatballs, burgers, koftas and more.

Turkey is quick and easy to cook. A Turkey steak takes just 2-3 minutes on each side to pan-fry; mince-Turkey takes the same time as beef-mince or chicken-mince to cook (around 8-10 minutes in a pan); and a roast-Turkey takes around 20 minutes per 500 grams to oven bake – which is a similar time to a beef-roast, and less time than a chicken roast.

Turkey breast has just 2% fat and is high in protein. It’s a lean-protein option which helps you feel full for longer and is a great source of energy.

Turkey is rich in vitamins and minerals. Turkey is a rich source of B-vitamins, including B3 (niacin) – which helps turn food into energy, B6 (pyridoxine) – which is important for our brains plus immune and nervous system, and B12 (cobalamin) - which helps form red blood cells. Turkey also contains zinc and iron – immunity and energy boosters, and antioxidants such as selenium – which helps protect against disease.

Turkey is good for heart health. Skinless Turkey is low in cholesterol, and the lean-protein content helps to promote muscle growth and repair throughout our bodies.

Manu’s Turkey Koftas

 

 

INGREDIENTS

Koftas

  • 400g packet Ingham’s Turkey Breast Mince
  • 2 cloves garlic, crushed
  • 1 ½ teaspoons ground cumin
  • Coriander and smoked paprika
  • ½ teaspoon ground cinnamon
  • 1 egg
  • ¾ cup panko breadcrumbs
  • ¼ cup finely chopped parsley
  • Salt and pepper, to taste
  • 4 metal skewers

 

Sides

  • 4 small pita breads
  • Olive oil
  • 3 tomatoes, chopped
  • 2 Lebanese cucumbers, chopped
  • ½ small red onion, thinly sliced
  • ¼ cup fresh mint leaves, finely chopped
  • ¼ cup toasted pine nuts
  • Juice of ½ lemon
  • 1 cup Greek yoghurt
  • Lemon wedges to serve

 

METHOD

  1. To make koftas, combine all ingredients in a large bowl.  Season with salt and pepper. Using clean hands, mix well.
    2. Shape mixture into sausage shapes, using two heaped tablespoons of mixture per sausage (makes approx. 8 koftas). Thread two koftas onto each skewer.
    3. Heat a barbecue grill plate or char-grill pan over high heat. Cook pita breads for about 1 minute on each side or until charred. Remove. Cover with foil to keep warm.
    4. Brush koftas with oil. Cook on heated barbecue plate, turning occasionally, for about 6-8 minutes, until browned all over and cooked through. Remove.
    5. Meanwhile, combine tomato, cucumber, onion, torn mint, pine nuts, lemon juice and remaining oil in a large bowl. Toss to coat.
    6. Combine yoghurt and chopped mint in a bowl.
    7. Serve koftas on pita bread with mint yoghurt, salad and lemon wedges.
